5 Grains: Spelt, barley, durum wheat, rice and oats ( I used Waitrose LOVE life quick cook Italian 5 grains and cooked it as to instructions with some salt while I was preparing the vegetables)

A little information about my favourite grain Spelt:
Spelt is high in carbohydrates but also has very high levels of protein and dietary fiber. On top of those important compounds, spelt also contains high levels of iron, copper, manganese, magnesium, phosphorous, potassium, zinc, selenium, niacin, thiamin, vitamin B6, and folic acid. Spelt is a superfood and and it’s always my preferred choice over conventional wheat.
Prepare all your vegetables, cut up as much chilli and ginger as you like (I like a lot), drain your tofu and cut into cubes and drain the kidney beans. Add the ginger, chilli, broccoli, and carrots to the wok with some sesame oil. Cook on medium heat for a few minutes until the broccoli appears slightly tender. Add the tofu and kidney beans and give it a good stir. I only added some salt and pepper, but you can add whatever you like, I am happy with just the sesame flavour. In a wok everything cooks quite quickly, so once you are happy with the tenderness of the veg you can add the drained 5 grains and mix it all together. Season a bit more to taste and you are ready to go. Enjoy x
