This doesn’t even need a recipe, it’s so simple and you can adapt it to whatever you like! Buy yourself some Marigold Braised Tofu, you can get it at most health shops and then be creative!
Boil your favourite rice and in the meantime drain the tofu, cut or rip it into pieces, cut up the broccoli and any other vegetable you like…(it’s just that we like broccoli a lot in our house), add a chopped up chilli, some fresh ginger and fry it (in a wok or frying pan) with a little sesame oil. I added some tinned tomatoes and a little sugar as tinned tomatoes can be very tart. Add some salt and pepper and a little cumin if you like the flavour and its ready when the vegetables are the way you like them. I like the broccoli very firm, but that is up to you. Add whatever extra spices or herbs you like, drain your rice and serve!
