Aquafaba – Egg White Replacer

I have been asked to put a basic vegen egg replacer recipe on my blog, so here it is.

The liquid from a can of chickpeas can replace whipped egg whites in your vegan baking, even meringues.

For a standard sponge cake you will need:

90 ml chickpea water

50 g icing sugar

1/2tsp xanthan gum

2 tsp caramel or vanilla extract/flavour


!Do not add vanilla/caramel, sugar, or anything else until it is properly whipped!

  • put the chickpea water into a jug or mixing bowl
  • use an electric mixer to beat the liquid
  • continue beating until you have stiff peaks
  • It will take a while
  • be patient
  • once it’s starting to peak add the sugar
  • keep beating
  • add the vanilla/caramel
  • keep beating
  • add the xanthan gum
  • it should really form stiff peaks now

It’s ready to be used for your cake.

For meringues, pavlovas etc. use the full amount of liquid from the can and double the amount of sugar.

  • chickpea water
  • 100g sugar
  • 1/2 tsp xanthan gum
  • 2 tsp vanilla or caramel extract/flavour

Method is the same as above.
