Wholemeal Flax ‘n’ Hemp Bread

Another Super Easy Bread!

Wholemeal with flaxseeds and hemp protein.

500 g Strong Wholemeal Bread Flour

½ tsp Salt

1 1/2 tsp Quick Yeast

1 tbs Hemp Protein

2 tbs Flaxseeds (plus extra for topping)

300-330 ml Warm Water


  1. Take a bowl and add the flour, hemp protein, salt and yeast.

  2. Mix it all together

  3. Add the water and combine well.

  4. I usually start with a wooden spoon and then use my hands.

  5. Make sure that the dough isn’t too dry and not too wet. I like it to be a little sticky but you should still be able to shape it without getting stuck to everything. Adjust it with either more water or extra flour.

  6. Cover the bowl with cling film and leave it in a warm place for about 1 hour.

  7. Airing cupboard, an oven on very low heat, a sunny spot or if you are lucky to have one a food/plate warming draw on very low heat, all of this will do.

  8. Hopefully your dough has doubled in size after an hour.

  9. Add the flax seeds and  knead them into the dough for a few minutes.

  10. Line a baking tray with baking paper, shape your dough into a round, oval or whatever shape you like . *

  11. Cover your dough again with cling film and keep in the warm place again for about 30 mins. It should rise again, possibly not as much as before.

  12. While the dough is resting for the last time, preheat your oven to 200C and put an extra baking tray with 1/2 glass of water of water on the bottom rail of the oven.

  13. After 30 mins remove the cling film.

  14. With a sharp knife cut the top a few times.

  15. Sprinkle extra flaxseeds over the dough.

  16. Put your tray with the dough in the middle or just below the middle in your preheated oven.

  17. Bake in the preheated oven for 35-40 minutes.


  • The water on the tray will add moisture to the loaf while baking and help to produce a lovely crust on your bread.

  • If you have a steam oven or moisture options on your oven then you don’t have to add the water to the extra tray.

  • Adding the water is not influencing the actual bake, so you can leave the water but you will probably have a more dull looking bread and no crust.

*  If you rather have a tinned loaf you can shape the dough and put it into an oiled 1kg/2lb bread tin.
